castes
100% Arinto from the Azores. Arinto dos Açores is an autochthonous variety, exclusive to the islands of the Azores, having in common with Arinto from the mainland only its name and good acidity.
Concept
A unique terroir in the world, in the middle of the Atlantic Ocean, at the base of the Pico volcanic mountain, the vines are planted in the rock crevices, next to the sea, where you can hear the “crab singing”, because it is here that there is more sun and hot. A proximity of, at times, a few meters that requires the protection of the vineyard by walls (corrals) from the strong and saline winds of the Atlantic.
Test results
Clean citrus yellow color. Pure mineral aroma, citrus with notes of grapefruit. Tense attack, fresh with a very present minerality and acidity, good persistence and salty notes.
Gastronomy
Fresh, very mineral and saline. Ideal partner for oysters, barnacles and shellfish. It also works with grilled fish, salads and fresh seafood.
Winemaking
Selective manual harvest in 40Kg baskets, whole bunch pressing, transfer after 24 hours to 600-1000L fermentation vats.
