GRAPES
Viosinho (40%), Rabigato (50%), Códega do Larinho (10%).
ORIGIN
Old vines and vineyards with selected varieties located at a
average altitude of 500 meters, particular preference for grape varieties
high fixed acidity, as in the case of Rabigato and/or mixture of
varieties in old vines where low yields allow a
great balance between acidity and aroma.
WINEMAKING
Manual harvest. Fermentation with cold technology, in an environment
reductive, with temperature controlled around 16°C,
using very gentle crushing and pressing processes
under an inert atmosphere in order to preserve the full potential
aroma of grapes.
PHASE
4 months aging in stainless steel.
