Winemaking:
The hand-picked grapes, chosen from the plots with the best maturation balance, were vinified at Quinta da Leda winery. After total removal and soft crushing, they were taken to stainless steel tanks and / or presses operated by robots, where fermentation took place with prolonged maceration and pumping at controlled temperatures. There was a long post-fermentative maceration, in order to obtain the best aromatic extraction, which allowed the transfer of quality components from the skin of the grape to the wine. Callabriga was taken to Vila Nova de Gaia between October and December, and its maturation lasted for about a year in used oak barrels, French (90%) and American (10%). The final blend was prepared from a qualitative selection, carried out after several tastings, which made it possible to choose the best wines, by barrel and grape variety. The final blend was lightly filtered before bottling.
Varieties:
Touriga Franca, Touriga Nacional, Tinta Roriz
Test results:
It has a deep ruby tone. It has an intense and complex bouquet, with predominance of ripe red fruits (currant and strawberry), black fruits (plum) and floral notes of rock-rose. Spicy aromas (pepper and curry) are also present, due to the maturation of the oak. The oak notes of excellent quality are very well integrated. In the mouth it presents a thin body, good quality tannins, a well integrated acidity, a strong presence of red fruits and hot and spicy notes. It has a long and complex finish.
Store and serve advice:
Over time, a deposit may develop. The bottle must be kept horizontal, in a dry and cool place. To reach its full potential, this wine must be opened 1-2 hours before serving. Serve between 16ºC and 18ºC.
Pairing with food:
Ideal with red meat, large game and intense cheeses. Rich and tasty, it always goes very well with rump and asparagus.
