Very complex aroma, of mineral character in balance with discreet notes of exotic fruits and citrus, orange peel, in perfect balance with suggestive notes of toasted French barrel that give it great aromatic complexity.

In the mouth it shows a lot of volume and freshness, very long with acidity
very alive natural.

Gastronomic wine, fish baked in the Portuguese oven, soft sheep's cheese, white meat and cod dishes.

SOURCE
In this wine we look for aromatic concentration and acidity
elevation of Códega do Larinho grapes from the vineyards
very old traditional traditions of the high quotas of the Douro Superior,
about 550 meters in altitude. With this wine we seek
recover this practically exclusive native Douro variety
of the old vineyards, and thus show all its character very
mineral and creamy.

VINIFICATION
Manual harvest for small 15 kg perforated boxes,
fermentation with cold technology, in a reductive environment, with
controlled temperature around 16ºC, using processes
very soft crushing and pressing under inert atmosphere
in order to preserve the full aromatic potential of the grapes. It is made
a great effort so that all pre-fermentative operations
carried out with the utmost rigor, being responsible for the
intrinsic quality of the future wine. The totality of wine
ferment in used French oak wood and remains there
after a small racking over fine lees with agitation
periodic “battonage” until the final batch is made at the end of
Spring.

INTERNSHIP
Fermentation and prolonged aging in French wood with
lees agitation for 9 months until bottling, with
minimum aging of 3 months in bottle.
