Winemaking:
Grapes from the younger vines contributed 80% of the final blend. The remaining 20% came from the very old parts of the vines (over 70 years old). The vast majority of wines, both old and new, were fermented in 10,000 kg stainless steel tanks for a week. A small part of the grapes from the old vines was trodden and fermented in presses for the same period. All wines were fermented under a controlled temperature ranging between 25º and 27ºC. The best wine from the press, from a traditional basket press, was also used for aging in the final blend. 80% aged for 14 months in stainless steel tanks. The remaining 20% with 225 liters of alcohol used French oak barrels for 14 months until the final mixture.

Test results:
Very concentrated aroma, with intense aromas of ripe red fruits, notes of violet and "cistus". Great structure, round, full-bodied and ripe tannins, with a long and persistent finish.
Store and Serve Advice:
Storage Lying at a temperature of 15°C. Serve at a temperature of 16°C to 18°C.
Pairing with food:
This wine is finely paired with red meat, roast beef and grilled meats.
